Brandy mojitos!
Our first summer heatwave in Vancouver seems like the perfect opportunity to to share this recipe for the most dangerously delicious cocktail going – brandy mojitos! We discovered it a couple of months ago at a winemaker’s dinner at Fraiche, a very posh place in West Vancouver. I’m not sure that I’ve ever tasted brandy until recently, but now we’re hooked, at least for summer when mojitos are the perfect answer to a sunny patio.
Below are instructions for making one mojito. We’ve started making pitchers of them to avoid having to move from our sunny spot on the deck when it’s time for a refill – double, triple, quadruple as you like. (more…)
Other people’s gardens
Although I am enjoying new forays into container gardening since moving to Vancouver, downsizing from yard gardening has increased my interest in planted spaces outside my wee concrete plot. Perhaps it’s also because great gardening is much easier in this temperate climate than it was in good ol’ zone 3. West coast gardens are amazing and they’re everywhere! The long growing season, perpetual moisture and lack of bone-chilling winter cold all make it possible to create truly beautiful outdoor spaces.
As I walk around inspired and inspired again, I’ve decided to start a series of posts on other people’s gardens. I’ll continue to write about the progress and delights of my own garden, but you can also expect pictures and thoughts as I troll through gardens near and far admiring the handiwork of green-thumbed kindred spirits.
The photo above is from the charming Goats on the Roof Old Country Market in Coombs on Vancouver Island. We spent a few days over on the island when we first arrived from Calgary while we waited for our furniture to catch up. Seeing the whimsical planting on this green roof was the antidote that instantly calmed my frazzled moving nerves.
Zucchini and tomato strata
Egg stratas are a favourite food of mine. They’re healthy and nourishing and one of those foods that can be made with an endless variations of ingredients and flavours. This weekend it’s ripe tomatoes and small organic zucchini along with fresh herbs from my patio garden. The dill tastes beautiful in this dish with the tomatoes and zucchini. If you make stratas, I’d love to hear about new ideas for flavour combinations.
The recipe below serves two to four people and can easily double or triple if you’ve got a larger group.
Zucchini and tomato strata
4 slices of bread
3 eggs
1 cup of milk
1/4 cup onion, finely minced
1 teaspoon dijon mustard
1 tablespoon fresh dill, chopped (or 1 teaspooon dried dill)
1/8 teaspoon paprika
Fresh ground pepper
1 tomato, diced
1 small zucchini, chopped
1/2 cup grated mozzarella cheese
1/4 cup fresh chives, finely minced
Break bread up into small pieces and spread in a greased 9″ round baking pan. Whisk together eggs and milk and add onion, mustard and spices. Pour over bread. Scatter tomatoes and zucchini over top of bread and egg mixture and press down lightly. Top with cheese and bake at 375F for 25 to 30 minutes until egg is set. Sprinkle fresh chives over top.
Serve with muffins and fresh fruit for breakfast or with salad for lunch or dinner.
Small space gardens
I’m starting to feel very excited about my forthcoming foray into small space gardening. Look at this beautiful little planter box we spotted outside of Go Fish! in Vancouver. What more can you ask for? Tiny daffodils and narcissus, pansies, creeping something and spring time annuals. Even a little rock. Beautiful!
