Homemade pizza

Homemade pizza is a beautiful thing. It tastes so good. It’s infinitely customizable. It’s the perfect food to find leftover in the fridge at the end of a long day or when you’re looking for an agreeable and easy lunch. I’ve become an even bigger fan of homemade pizza since finding a quick and easy recipe for pizza dough. It can also be frozen to keep you a step ahead of the game, so be sure to make a double batch next time if you find you like it as much as I do.

The recipe below is adapted from Blue Eggs and Yellow Tomatoes. I’ve added in some dried herbs and flax seeds to increase flavour and health benefits.

1 cup lukewarm water
1-1/2 teaspoons active dry yeast
3 cups flour (we use a gluten free mix; 2-1/2 cups unbleached flour plus 1/2 cup whole wheat flour is also a good combo)
1-1/2 teaspoons sea salt
1 tablespoon dried Italian seasoning
2 tablespoons flax seeds
1/4 cup extra virgin olive oil

Whisk water and yeast together in a 2-cup measuring cup and let stand for 5 minutes.

Combine flour, salt, herbs and flax in a food processor and pulse to blend. Whisk the olive oil into the yeast mixture. With the food processor running, pour the yeast mixture through the feed tube and process until the dough forms a ball, about 1 minute.

Knead the dough briefly on a lightly floured surface. Brush a large bowl with olive oil. Transfer dough to the bowl and turn once to coat with oil. Cover the bowl with a clean tea towel and let stand until it doubles in volume, about 1-1/2 hours.

Punch dough down. Divide into 3 balls, about 8 ounces each. Each one rolls out to a 12 inch pizza, and can be kept in the fridge for about 2 days, or in the freezer for a month.

Roll out the pizza dough on a lightly floured surface into a 12 inch round and transfer to a baking sheet sprinkled with cornmeal. Add the sauce, toppings and cheese of your choice and bake at 400F for about 15-20 minutes, until golden brown.

    That crust is unbelievable. Best homemade pizza I’ve ever had, and it’s all in the crust. Better than take-out!
